Dairy free high fat chocolate fudge

Looking for a rich & creamy, chocolately, coco-nutty treat? Whip up a quick batch of this high (healthy) fat fudge and enjoy the this pot of gold at the end of your vegan-friendly rainbow.

Dairy free high fat chocolate fudge

Prep Time: 8 minutes

Ingredients

  • 1 1/2- 2 avocados (did you guess it?)
  • 4 tablespoons raw cacao powder
  • 3 tablespoons maple syrup
  • 1/2 cup coconut butter (or coconut oil)
    • Coconut butter:
      • 2 cups organic coconut flakes
      • 1/4 cup organic coconut oil

Directions

For Coconut Butter:

  1. Place coconut flakes in food processor.
  2. Blend for about 30 seconds to thoroughly shred coconut flakes.
  3. Add coconut oil and process until smooth. (Will still be slightly chunky since coconut flakes are extremely dry).

For Fudge:

  1. Place all ingredients into blender.
  2. Blend until smooth.
  3. Pour fudge into 6 inch spring form pan lined with wax paper (or any small baking dish).
  4. Place in refrigerator for a few hours or overnight to set.
  5. Carefully remove from pan.
  6. Slice and enjoy.
  7. Store in refrigerator for 2-3 days.

Serve with strawberries & top with pecans (or enjoy by its wholesome self).
